Blueberry muffins with crumble

Ingredients

Blueberry-Muffins
2 eggs
80 g soft butter
120 g coarse raw sugar
1 tbsp vanilla paste
250 g light spelt flour (or classic spelt flour)
2 tbsp baking powder
150 ml whole milk
250 g blueberries (frozen)
Crumble
50 g butter
60 g coarse raw sugar
40 g flour
1 Prise salt

Preparation

Servings: 12 muffins

  1. Muffins
    Mix eggs, butter, sugar, and vanilla paste well. In a separate bowl, mix spelt flour, baking powder and salt, then add to the egg mixture. Pour milk into batter and mix well. Gently fold in the blueberries. Fill muffin cups with the batter.
  2. Streusel
    Mix butter, sugar, flour and salt and crumble with your hands. Add Crunchy Müesli and mix to a loose mixture. Sprinkle the crumble over the muffins and lightly press on lightly.
  3. Baking
    Bake for about 25 minutes in the middle of an oven preheated to 180°C (350°F).
