‘Extrudere’ means ‘to squeeze’

In this process, maize, rice, wheat or oats are moistened with water, kneaded into a dough with a rotating screw and then squeezed through a shaping nozzle. The dough rises, yielding a tasty crust after drying. When the product comes out of the nozzle, it is coated with sugar or cocoa syrup and dried. This is how we make our lovely teddies and our popular chocolate shells, for example. The same machine also produces chocolate-filled grain puffs.
