8 silicone muffin molds, approx 5 cm
1 2/3 cups familia Bio Knusper Superseeds, chopped
2/3 cup organic butter, melted
1 tbsp organic honey
2 cups organic quark
4 tbsp organic honey
3 organic egg yolks
1 organic lemon, zest
1/2 vanille pod, seeds scraped out
1/6 cup white flour
3 organic egg whites, beaten until stiff
1/2 cup seasonal organic berries, e.g. strawberries, raspberries, redcurrants etc.
a little peppermint to garnish
- Base: Mix familia Bio Knusper Superseeds with butter and honey. Divide between the molds, press down firmly, chill.
- Filling: Mix quark, honey, egg yolks and lemon zest with vanilla seeds and white flour. Fold in stiffly beaten egg whites. Divide the mixture between the molds.
- Baking: Bake for 40 to 50 minutes in the middle of an oven preheated to 250°F. The mixture should not color. Remove from oven, allow to cool, chill for 2 hours.
- Topping: Carefully release mini cheesecakes from the molds. Garnish with fresh berries and mint.
