Coconut quinoa müesli

Ingredients


250 ml coconut milk


300 ml water


¼ tsp salt


200 g quinoa


350 g blueberries


80 g familia crunchy müesli (e.g. body balance Blueberries & Pecans)


4 tbsp clear honey


Method

  1. Combine the coconut milk, water, salt and quinoa in a pot, heat to the boil and simmer, uncovered, for around 20 minutes, stirring occasionally.
  2. Blend two thirds of the blueberries with the water and then add to the quinoa. Top with the remaining blueberries and crunchy müesli. Drizzle with honey.
