For a 24 cm Ø springform pan, cover the bottom with baking paper and grease the sides
Serves around 8


500 g wholemeal flour

100 g familia crunchy müesli (e.g. Original)

1½ tsp salt

½ cube of fresh yeast, broken up

around 300 ml lukewarm water

180 g Gruyère, thinly sliced

100 g seedless black grapes, halved

40 g familia crunchy müesli (e.g. Original)


  1. Combine the flour, müesli, salt and yeast in a bowl. Add the water, stir, and then knead until it forms a smooth dough. Put the dough back in the bowl, cover it, and let it rise at room temperature for around 1.5 hours until doubled in size.
  2. Roll the dough out on a lightly floured surface until you create a rectangle measuring roughly 30 x 50 cm. Cut the dough crosswise to form 7 strips, fold them accordion style and arrange them in the prepared springform pan. Place the cheese slices and halved grapes into the folds. Let the dough rise again for another 30 minutes. Brush the top of the dough with a bit of water and sprinkle the crunchy müesli on top.
  3. Bake in the lower half of an oven that has been preheated to 200°C for approximately 35 minutes. Take the bread out of the oven, let it cool slightly, remove it from the pan and let it cool on a wire cooling rack.
