Blueberry muffins with crumble

Makes around 12 muffins


2 eggs

80 g butter, softened

120 g raw sugar, coarse

1 tsp vanilla paste

250 g spelt flour light/classic

2 tsp baking powder

150 ml whole milk

250 g blueberries (frozen)

50 g butter

60 g raw sugar, coarse

40 g flour

A pinch of salt

80 g familia crunchy müesli (e.g. body balance Blueberries & Pecans)


  1. Muffins: Combine the eggs, butter, sugar and vanilla paste. In a separate bowl, combine the spelt flour, baking powder and salt, then add to the wet mixture. Add the milk and stir to combine. Add the blueberries. Pour the batter into the muffin tin.
  2. Crumble: Combine the butter, sugar, flour and salt and crumble it by hand. Add the crunchy müesli and mix to form a loose mixture. Top the muffins with the crumble and press in slightly.
  3. Place the muffin tin in the centre of an oven that has been preheated to 180°C and bake for approximately 25 minutes.
